Ingredients:
- 1 lb Lean Ground Turkey (Italian Style)
- 1 tablespoons extra virgin olive oil
- 1/2 cup onion, diced
- 3 cloves garlic, minced
- 1 26 oz. jar of your favorite spaghetti sauce
- 5 (8 oz each) zucchinis, cut into your preferred shape with a mandolin or spiralizer
- salt and fresh cracked pepper, to taste
Directions:
- Make your noodles with mandolin or spiralizer and put then in a bowl set aside.
- Chop up the remaining leftovers of the zucchini that were not able to be cut into noodles.
- Put the turkey in a large non stick skillet and add in 1/2 the onion, garlic and chopped up p bits. Cook until fully browned and no pink remains.
- Add in the spaghetti sauce and reduce heat to low. Cover and simmer.
- Then heat a separate large nonstick skillet to medium heat. When hot add the oil, onions and garlic and cook until fragrant, about 1 to 2 minutes.
- Increase heat to medium-high and add the zucchini, season with salt and pepper to taste and cook about 1 minute. Give it a stir to mix everything around and cook another 1 to 1-1/2 minutes, or until the vegetables are cooked through yet firm.
- Divide the zucchini into bowls and top with sauce, add some grated cheese and enjoy!
